My team and my family need a little time to recharge.

Our Waterville location, Cocina de Carlos at Smedlap's Smithy, is OPEN for regular hours today.
For years, Cinco de Mayo was a day full of stress—and even panic—as we thought about how to attract and satisfy all the people wanting to celebrate at a Mexican restaurant like ours.
Over time, I realized I had to change this mindset—for the sake of my family, my team, and the comfort of our regular customers.
A few years ago, I stopped doing many of the “normal” things expected of a Mexican restaurant on this day and decided to focus on three things:
1. For our customers: Making sure they have a space to relax, enjoy the day, and receive the same quality service we offer every day. I’ve learned it’s better to say, “I’m sorry, but we’re very busy and there’s a wait,” than to push ourselves beyond our capacity.
2. For my team: Helping them enjoy the experience and forget the idea of Cinco de Mayo being a nightmare. We try to prepare well, avoid overbooking catering, and stick to our regular hours.
3. For my family and me: Simply enjoying the occasion as much as possible.
At the end of the night, I think we met those goals. I did have to turn down some reservations, but the wait was reasonable, and we didn’t receive a single complaint. A few guests enjoyed a few too many tequilas, but there were no problems.
It brings me so much joy, and I feel truly blessed with the outcome.
