Today we’re celebrating National Burrito Day, and we’d love to share a little story behind one of my favorites: the Mijas Burrito.

It all started years ago when I was the manager at Mi Hacienda here in Toledo. Back then, during busy days at the restaurant, I would make myself something simple but delicious: a flour tortilla with a little meat and beans, topped with a touch of spicy salsa and cheese sauce. I loved it.

One day, a customer asked me why we didn’t have it on the menu. And that’s how the idea was born.
At the time, the name “Mihas” referred to Mi Hacienda, as many locals used to call the restaurant.

Later on, when I moved to Perrysburg, I brought that burrito with me, but changed the H to a J. In Spanish, mija is a loving way to refer to your daughter, and that small change gave it a more personal and meaningful touch.

To this day, it’s still one of my favorite dishes. It’s a simple burrito, but full of flavor.

And yes, today we’re serving it at all our locations, with a small variation: at Lupitas, we prepare it with black beans instead of our fresh pinto beans.

As always, everything is cooked to order, so every burrito comes out fresh and delicious.
