Today is Taco Tuesday, and we’d love to share a fun taco fact.
For the inventors of the taco (us, the Mexicans 😉), what truly defines a great taco is not only the quality of the taco itself, but the salsa.
A good salsa, spicy or not, is what completes an excellent taco.
For some people, salsa may not change much, but for us, it is essential. For example, a carne asada taco pairs beautifully with a red chile de árbol salsa, while slow-cooked or steamed meats shine with a fresh green salsa.
Each type of taco and each palate creates its own epic ending.
As a side note, Balance Pan-Asian Grille (one of my favorite places) has one of my favorite non-Mexican tacos, the Mongo Taco. I always order it with their Bang Bang salsa. It’s rich, flavorful, and spicy in the best way.

Today, we’ve decided to keep both Lupita’s Cantina and Cocina de Carlos closed.
Thinking about the safety and well-being of our employees and our guests, we felt it was best to stay home today and take a pause. A chance to enjoy the day, the games, and have a different kind of Sunday than our usual work routine.
We know this may be inconvenient for some of our customers, and we truly apologize. We appreciate your understanding and support more than you know.

🌿 A note about the fats we use at Lupitas
At Lupitas, we pay close attention to the fats and oils we cook with, because in a real restaurant kitchen, that matters more than most people think.
A commercial fryer runs all day at around 350°F.
Under those conditions, cheap oils like regular vegetable oil, corn oil, or creamy shortening break down quickly.
That’s why we choose differently.
🔥 For frying
We use high oleic sunflower oil (Sun-Fry).
It is more heat-stable, lasts longer without degrading, contains zero trans fats, and performs better during long service hours.
It also costs 2–3 times more than standard commercial oils.
👉 Our chips are fried in a separate fryer and are 100% vegan.
🍳 For the griddle and pans
For fajitas, street tacos, quesadillas, and everything cooked on the flat top, we use avocado oil.
It has a very high smoke point, a clean flavor, and an excellent fat profile.
Yes… it can cost up to 8 times more than regular oils.
🫘 Refried beans (Lupitas only)
Here we honor tradition.
We use pork lard, only for refried beans, because that’s where it belongs.
🥩 One more important detail
Both our shredded chicken and ground beef are prepared without seed oils, and the same applies to all dishes cooked on the griddle.
This is not something most restaurants pay attention to, but for us, it matters.
🧠 One important thing
When fried food is cooked in fresh, high-quality oil, your stomach notices. Less heaviness. Less discomfort. Less inflammation compared to food fried in old, degraded oil.
We are not saying our food is “healthy food.”
What we are saying is that our food is made with care, better ingredients, and respect for the health of our guests and ourselves. "Because we eat here too".
Seeing our suppliers and even health inspectors enjoying our food from time to time makes us proud. It tells us we’re doing things the right way.
